Spinach Fusilli in Caprese Pasta Salad

INGREDIENTS
1 box Scratch Pasta ‘Spinach Fusilli’
⅔ cup olive oil
⅓ cup balsamic vinegar
2 garlic cloves, grated or chopped very fine
4 cups cherry tomatoes, halved
16 oz. fresh mozzarella, small balls or torn large ball
1 cup fresh chopped basil
Red Pepper Flakes, for garnish (optional)
Jarred Basil Pesto (optional)
1. Cook pasta according to package directions, drain, toss with 1 tbsp. Olive oil, and set aside.
2. Meanwhile, whisk together balsamic vinegar, olive oil, garlic, and salt and pepper to taste.
3. Pour dressing over tomatoes and mozzarella to marinate, about 15 minutes, then toss in pasta. Add a spoon of fresh basil pesto, if desired.
Top with fresh basil, and serve.
